Last month, we pulled our rig into Lagoons RV Resort for what ended up being one of the most relaxing getaways we’ve ever had. From the moment we turned onto Enterprise Blvd and spotted the well-kept grounds and lush landscaping, I felt a deep exhale.

The check-in was smooth, the staff friendly and helpful. They guided us to our full-hookup concrete pad, complete with a picnic table and level site. We spent that first evening walking the grounds—green grass, quiet neighboring rigs, the sounds of distant waves or wind in the trees—and felt instantly at home.

That night, we cooked a simple dinner of grilled shrimp tacos (recipe below) and sat under the skies, watching the stars. It was quiet, gentle, and exactly what we needed.

Simple Shrimp Taco Dinner

  • Fresh shrimp (peeled & deveined)
  • Olive oil, lime juice, garlic, salt, pepper
  • Corn tortillas
  • Toppings: shredded cabbage, pico de gallo, cilantro, a drizzle of crema

Marinate the shrimp for ~15 min, grill ~2–3 min per side, warm tortillas, assemble. We served with a side of grilled corn. Easy, flavorful—and didn’t leave the kitchen messy.

That first night set the tone: relaxation, good food, and a sense that this stay would be more than a stopover.
