During our stay, I leaned into cooking in the motorhome/rig kitchen. Here are three favorites (kid-friendly, senior-friendly, crowd-pleasers) that we rotated over the week.
- One-Pan Chicken Fajitas
- Chicken strips, bell peppers, onions, fajita seasoning
- Saute all in one pan; serve with tortillas, salsa, sour cream
- Hearty Vegetable Soup with Sausage
- Sausage, carrots, potatoes, celery, broth, tomatoes, beans
- Let simmer while you do errands; warms you up after beach or hiking
- Foil Packet Fish & Veggies
- White fish filets, zucchini, cherry tomatoes, lemon slices, herbs, olive oil
- Seal in foil, grill or cook in oven for ~15 min
These were easy to scale (for two or a full family), used minimal pans, and left us full. Having a good rig kitchen pays off.
