During our stay, I leaned into cooking in the motorhome/rig kitchen. Here are three favorites (kid-friendly, senior-friendly, crowd-pleasers) that we rotated over the week.

  1. One-Pan Chicken Fajitas
    • Chicken strips, bell peppers, onions, fajita seasoning
    • Saute all in one pan; serve with tortillas, salsa, sour cream
  2. Hearty Vegetable Soup with Sausage
    • Sausage, carrots, potatoes, celery, broth, tomatoes, beans
    • Let simmer while you do errands; warms you up after beach or hiking
  3. Foil Packet Fish & Veggies
    • White fish filets, zucchini, cherry tomatoes, lemon slices, herbs, olive oil
    • Seal in foil, grill or cook in oven for ~15 min

These were easy to scale (for two or a full family), used minimal pans, and left us full. Having a good rig kitchen pays off.
